6 cl GILI ginger elixir

6 cl Oat milk

2 tbsp Coconut oil (melted)

1/2 Lemon zest

250 g Flour (we recommend all-purpose flour or spelt flour)
- 1 tbsp ground flax

80 g Sugar (we recommend coconut sugar)

1 tsp Baking powder

Pinch of salt
HOW TO
- Combine all dry ingredients (flour, sugar, baking powder, flax seeds, zest, and salt) in a large bowl.
- Add the GILI ginger elixir, the oil, and plant-based milk, and mix thoroughly.
- Shape the dough into approximately 12 balls while preheating the oven to 180°C. Let the dough balls rest for 15 minutes.
- Bake the cookies for 10 minutes at 180°C. Enjoy!
TIP BY CHEF ENZO:
FOR THE NON-VEGANS: replace the flax seeds by 2 eggs to bind the cookies more easily.
